Luxury Amazon cruise operator Aqua Expeditions has announced two 2025 sailings with Peruvian celebrity chef, Pedro Miguel Schiaffino. Onboard the Aqua Nera, these chef-hosted cruises will include unique culinary activities led by Chef Schiaffino such as a ceviche masterclass, cocktail demonstration, and an intimate hosted dinner. Two four-day sailings are offered: June 3 – 7, and September 30 – October 4. Chef Schiaffino has worked with Aqua Expeditions since 2007 and is recognized as a pioneer of rainforest-to-table cuisine. As the cruise line’s consulting chef, he oversees the culinary program on both Peruvian vessels, the Aqua Nera and Aqua Amazon.
The pioneer of rainforest-to-table cuisine
Pedro Miguel Schiaffino was the chef and previous owner of Malabar and ámaZ, which used to be two of Lima’s most cutting edge and innovative restaurants prior to their closure. He is also part of the Executive Committee of the CIA’s Latin Cuisines Advisory Council and founder of the catering company Schiaffino Gastronomika.
2007 marked the beginning of a longstanding partnership between Pedro Miguel Schiaffino and Aqua Expeditions as he joined the team as Consulting Chef on the Aria Amazon. Today he’s responsible for the culinary experiences on three of our vessels: Aqua Nera, Aria Amazon, and Aqua Mare.
