Chef Grégoire Berger, who helmed Ossiano until the close of 2024, infused every element of the restaurant with his Breton heritage and passion for the ocean. Raised in Brittany, France’s northwestern region, Berger drew from its coastal bounty to craft an intricate 10-course tasting menu that bridged tradition and innovation. Together with restaurant manager Guillaume Barray, Berger fostered a synergy between the kitchen and the dining room, creating a seamless narrative for each guest.
“Over the years, our front-of-house team has become the heart of our story,” Berger reflects. “Some have been with us since the very beginning, ensuring a consistent and heartfelt experience.”

Guests are invited to traverse different spaces within the restaurant, beginning with an atmospheric room lit by bioluminescent plankton. The journey continues with displays of globally sourced premium ingredients and interactive moments, such as the carving of a foie gras ‘candle’ at the table. These thoughtful touches transform dining into an unforgettable experience.
